Fremont Fresh Will Open a Smokehouse

Nov 15, 2000 -- Morrie Eskenazi is the new meat manager at Fremont Fresh Market, and he brought with him his own cow statue and a huge in-store stainless steel smokehouse. The Cow now stands on a ledge overlooking the store's parking lot. The custom-made smokehouse is behind the meat counter looking something like a giant refrigerator. It is a gas-fired, gravity fed smoker that uses sawdust to produce the smoke. Eskenazi says as soon as the piping is completed, he will start smoking bacon, hams, ribs, fish and fowl.

Eskenazi has over 40 years of experience as a butcher. He used to run the White Center Meat Co. His philosophy as a butcher is, "meat should be trimmed so that there are no surprises and close to zero waste when the customer takes the meat home. I want to sell people what they'll like."
