New Deli Chef Settles In at Fremont Fresh

If everything new is old, Fremont Fresh's new chef brings back everything we remember fondly about the food of Seattle's past.
Chef Brian Fox recounts a cooking history encompassing 20-odd years in some of the finest kitchens: the original Jake O'Shaughnessey's, Trattoria Mitchelli, McCormick & Schmick's, Chez Shea, 1904, Italia--and let's not leave out the Beeliner Diner. "It's just as much fun serving coconut cake and foot-long hot dogs," he says, "as long as it's good food."
Which leads us to the deli. After two decades in restaurant kitchens, Fox turned to consulting. He spent three years designing kitchens, conceiving menus and inventing recipes for restaurants, among them the Triangle Tavern circa 1995. "After three years the business end took over," he says. Preferring to keep his focus in the kitchen rather than the office, he took a position at City Greens in the deli. He found he liked the new set of challenges offered by deli-style cooking.
Now at Fremont Fresh for six weeks, Fox says, "I've got more job satisfaction here than any other time. I had almost a blank slate to work from. I'm in my element, coming in here and overhauling everything."
The Fremont Fresh deli serves up sandwiches, soups, salads, and great hot case selections like roasted half chicken with rosemary or pork medallions in a savory sauce. The store is located at 3601 Fremont Ave. N.
